Slow Cooker BBQ Chicken

This Slow Cooker BBQ Chicken is sweet and sticky and slow cooked to perfection. It makes a great sandwich, wrap or can even be served over rice. It's perfect for family dinners, parties, game day, or anytime you’re looking for something super easy and incredibly delicious.

My mom bought us a crockpot when we moved into our apartment, and it's been such a little luxury to have over the busy summer months, when you just don't want to spend all of your time indoors cooking when the sun's out. You can have dinner ready in no time with little effort!


I love Sweet Baby Ray's BBQ Sauce and was so excited to find it in the UK, but you can really use whatever kind of BBQ sauce you like!



INGREDIENTS
  • 1.5-2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • ¼ cup balsamic dressing
  • ¼ cup brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp hot sauce (We love Marie Sharp's which we discovered on our trip to Belize. But you can also find it on Amazon here!)

INSTRUCTIONS 

Season chicken breast lightly with a pinch of salt and place in your crockpot. 

In a mixing bowl combine BBQ sauce, hot sauce, balsamic dressing, brown sugar and Worcestershire sauce. Stir until well combined. Pour over chicken, cover and cook on HIGH for 3-4 hours.

Shred the breast with two forks, and then re-cover and let cook in sauce for about 10-15 minutes to soak it all up.


Serve as a sandwich, over rice, in wraps, on a salad or eat a plateful as is! This goes great with coleslaw in a bun or if you're having it in a wrap, set aside some toppings so your friends can build their own - tomatoes, cheese, lettuce, refried beans, grilled veggies, etc.. get creative!
